From the netlist, there are no connections to M2. So, perhaps the problem is not with the resistor but with the MOSFET which does not appear in the netlist. Perhaps check your library and make sure M2 is found and it is correct.
Hold time must be considered if the MINIMUM (clock-to-Q + combo delay) is less than the minimum hold time. This would rarely be the case. So, hold time is often not considered in setting the maximum frequency.

If the noise is from the preamps, your idea may work. The noise in the two channels must be uncorrelated. Then, a few things.
1. Attaching the microphone to two preamps may be decreasing the signal. A bad thing which will decrease the signal to noise ratio.

Do you have enough setup time and control of the clock duty cycle to latch the CS signal on the opposite (unused) clock edge? Or, can you delay the clock and then apply the decoder output to a D flip flip clocked with the delayed clock?

Have you considered UART devices? NXP makes a chip with four serial ports which are fully buffered. Then you will have a proven and well documented solution. Throw on three chips and your done!
