Dumb question...sorry... but I'm wondering if a 12V DC wall adapter can me made variable with a 5k or 10k pot at the 12V end? So still plug it into the 110V wall outlet and add a pot at the 12V end to make it variable. Will this work? Ideally I'd also like to limit the voltage to 10V. Thanks in advance.

Most unlikely, you can't change a fixed power adaptor, but you can add a simple voltage regulator (google for LM317) and have the output voltage adjustable from, say, 1.5V to almost 9V (assuming the input is 12Vdc) .. see attached picture ..
