i understand how does delta-sigma ADC work. what i am puzzled is how does the digital interface know where to delimit the bit-stream and read it in as a word? and by how many bits? what determine the number of bits to chop off for read?

The decimative filter downsamples the bitstream from your sigma-dalta modulation ,and output multi-bit such 16 bits ,the the digital part receive 16bits!
