For z-transform look in:
Digital Signal Processing: Principles, Algorithms and Applications (3rd Edition) by Proakis. You can find it in the Ebook section.
Laplace transform can be found in math book for electrical engineers. Or try searching google.
what kind of paper you are looking for? these two transformation are taught in undergraduage course and should be very easily to be found in textbooks.
Z transform is for discrete signal and Laplace transform is for continous signal. If continous system is sampled, you can get Z transform from Laplace transform, I guess how to do this is what you are looking for. Go to IEEE explore to search for it
for a very simple interpretation of σ-delta you should read the book by SKLAR " digital comm." if u get the idea then u can move on to PROAKIS "digital comm". for the laplace transform u should search a book of mathematical analysis rather than the books that gives u the formula without even telling u how did it get to be like this.
