Hi, I am creating a gerber file using ORCAD. For the moment I have those files:
TOP.art
BOTTOM.art
Drill.drl

Do I need other files to send to the manufacturer? (I don't need a silkscreen, nor a mask in my design.)

I have other questions:
1) How the manufacturer knows my board size ? Because when I import my files in a gerber viewer, it doesn't tell anywhere my board dimensions.
2) My TOP and BOTTOM are centered on (0,0) coordinate, can I leave it like this or should I place the bottom left corner to (0,0)?

Use extended Gerber format.

Do your design files clearly specify the following?
#of Layers
Board Dimensions
Finished Thickness
Material
Surface Finish
Outer Layer Copper weight (also known as Finished Copper)
Inner Layer Copper weight (if applicable)
Solder Mask Color (if Solder Mask is required)
Solder Mask Type (if Solder Mask is required)
Solder Mask Sides (if Solder Mask is required)
Silkscreen Color (if Silkscreen is required)
Silkscreen Sides (if Silkscreen is required)
Layer Order (also known as stackup)
Board Outline
Drill File
Design files are in Gerber 274X or 274D format (274X strongly preferred)

EIther use .GBR suffix or .GTL .DRL .GBL etc for all extended gerber files.,

Boards can be panellized with slots and drill micro-holes or V-score and designed by yourself or fabricator otherwise they will do anyways for single cutout boards.

Use a board outline layer to specify the board size.

Most PCB pool manufacturers will make solder mask by default without extra costs.

Specify your requirements in the extended gerber format.

Run the gerber, send the files to the fabricator!
