I need to design a solar charge controller with data logger. But unfortunately I've no idea what data I need to log. Can anyone tell me what the data need to log?

I would say battery voltage, charge current and battery temperature, set a flag to sample the voltage/current every minute or every 5 minutes say
All this depends on what you want to do with the data afterwards

Yeah you can send it to an SD card, serial port/usb, MSD may be better you don't have to have a PC connected all the time and make it portable sort of thing

All depends what you want, but can be this:

Voltage of battery/charging voltage,
Delivered current to battery/system in A and Ah (per day / per week average),
Output current from battery/system in A,
Output KW/h per day / KW/h per week,
Ratio statistics current and per day Ah In/Ah Out,
Current output KW/h,
.
.
.

You can use eeprom chips or memory cards such as microSD.

Use hall sensors for current measurement, dont use shunt resistor, specially if system have higher current ratings.
Check following two different types of Hall sensors A1302 (replacement for old UGN3503) and ACS712 serie or similar.
