converting single ended to double endded

I need to measure input from acclerometers that are single wire voltage output(one signal and one ground line). I read recently that double ended input signal will have good noise immunity. How do I convert the single ended inputs into double ended inputs?

Is the accelerometer going to be separated from the processing circutry? Conversion to diffrential could make sense then, but the conversion would have to be done next to the accelerometer.

There are a couple of circuits here for doing single ended to differential conversion if you decide it is worthwhile (page 10 onwards).
