from the specification of my sensor datasheet, it requires:
-low offset voltage, low offset voltage drift
-low leakage current, low leakage current drift
-low noise

this is due to the very low output voltage (uV to mV) level from my sensor (Thermopile).

one more question,
what is offset voltage?

is 741 suitable at this case?

Burr-Brown of Texas Instruments offers some very good opamp or instrumentation amplifier.
