How can I find a log of a number using VHDL?

VHDL provides many math functions including LOG(X), LOG2(X), LOG10(X), and LOG(X,BASE).

However, if you are trying to synthesize the code into something like an FPGA, then you will probably encounter language limitations in your synthesis software.
