Hello!
I am trying to make a switch that when a button is physically activated it starts an l.e.d. timer display that counts time, until the button is released.
How would I accomplish this, I have a small amount of experience with bread-boarding and soldering as a hobbyist, but would really appreciate not having to dig through a library of knowledge if a electronics sage out there could be so kind as to guide me in the right direction,

Microcontroller, other IC, PLD, FPGA, analog?

Specify min time, max time, resolution, precision.
Specify voltage levels.
Draw a sketch if your idea, maybe signal flow chart or timing diagram.

Do you want it to still display the time after the button is released?
 

Sounds like you are making yourself a digital stop watch. There are various method to make the timer, it depends on how complicated you can accept on your hardware and how accurate the timing system. See below link, may help you.
