most of the time, the station includes a normal solder iron besides the hot air blower. So it is two in one. But check the description for particular unit - some cheap equipment can be messy with names.

yes, you need a power source to apply some voltage to potentiometer. Edge pins connected to ground and +V, middle pin is your output to measure. Value can be anything from 10K to 500K. For the +V voltage you need to check the input voltage range of you eqipment.
Most common way is to use two coils of wire. They must be isolated and work like transformer. Feed first coil with some small AC voltage, measure feedback from second coil. Once you put some metal object near coils you will have a change in second coil output. Size of coils, number of turns...
this may be related to calibration of particular temperature sensor. For example if the readings are linear, but the sensor has some deviation from the line slope you can adjust this error by setting some coefficient. Then every reading will be multiplied by this amount to correct existing...
1) estimate your maximum current for this motor
2) calculate max. voltage across yout measurement resistor based on this max current (in item 1)
3) compare to you ADC max input range, also consider your OpAmp buffer gain, they all must fit in
4) calculate resolution of ADC, compare to changes...

only a few reasons:
1) most likely: you have floating inputs (pins configured as inputs and not connected)
solution: all unused pins change to output
2) less likely: something wrong with crystal (replace)
3) even less likely: something really wrong with your pcb layout...
