So the answer to the initial question is that the Diac cannot deliver an overvoltage to the gate due to the time it takes to fully conduct relatiive to the discharge time of the capacitor.

Without a freewheeling diode between the Q3/L1 junction and ground, L1 is merely a resistor. Suggest adding a diode with cath to L1. Looks like some capacitance is needed on the output too.
Without building and testing, it appears that the 555 switches the base of Q1 with a "ping". The ping in turn causes a ringing in the output tank, much as would occur in a frequency tripler used in a PLL. It looks effective though very low power.
5 volts thru a 2:1 divider would present 2.5 volts to the input. Your reference should also be 2.5 volts. By exceeding the 3.3 volts input on pin 7 you have damaged the pin 7 input, shorting the input protection diodes. You'll need to start over with another chip.

Your link doesn't work for me, so I cannot comment on what you indicated. More importantly one should not exceed the maximum gate current. If the 30 volts is current limited below the maximum gate current, the 5 volt value will never be exceeded.
