    The Art of Electronics by Horowitz and Hill (the one with the silver cover, not the black one) is generally accepted to be the beginner's Bible

    Interfacing 8-bit ADC to 7-segment display

    You might also want to look at the MAX7221. This takes much of the headache out of interfacing to 7 segment displays, handles the dimming etc
