Copper pouring is performed for following purposes:
1-Grounding on two-layer PCBs: In this case, both layers are usually signal layers and there is no Reference Place, therefore ground pours can be very helpful for efficient routing by providing a central ground.
2-EMI shielding...
My team do the same work or sometimes more than it. But I cannot show that in public as that is considered as classified.
Therefore I took them from internet as sample to make my point more clear.

Making connections through solder is not a good idea.
During development of a prototype board or a project, sometimes, we have to change a connection and it is much easier to disconnect a wrapping wire from one point and connect to another desired point...
Once I had to design a board with 20A Current carrying conductors. At that time no info was given about temperature.
I took 2oz Copper and 200 mil track width. (Calculated from some application note)

Use for following Essemtec Manual Printer
It has 1156 Pin BGA of ball size 0.6mm and few small 84 Pins BGAs of ball size 0.45mm, It is a dense board with mostly 0402 Packages.
This stencil give me about 1000 ( 1 Thousand )...
