When DTFN or ITFN number is dialled , it is routed to the IN via Tandem switches to be translated into what we cal a Down Stream Number , this number can be a normal PSTN number...

the both are session layer protocol,
the role of all session layer protocol is to setup, maintain and tear down sessions,
and they do not deal with the voice itself but they deal with signaling information associated with voice in order to deliver voice packets...

yes that's right , and main issue is the bandwidth of the ethernet LAN is 100Mbps , which is very huge in comparison with VoIP requirements, so , no Quality of Service QoS is needed , and as you are not going to pass through routers , so no session layer should be invoked...
one of the most famous applications for UDP is VoIP,
VoIP uses a transmission protocol called RTP "Real time transport protocol" which constructs packets based on UDP , in order to be very fast and real time , also retransmission and other acknowledgement techniques are insignificat with voice
