sorry but you choosed bad modul for rs232 communication. Your module just spports A2DP profile (audio stream) but for serial communication you need RFCOMM profile. Only one way how to use audio module for serial communiacation is use something like DTMF (ask google) modulation.

Several years ago I used a lot of mega128l. About 10% of them were not worked with external xtal. With internal oscillator worked fine. Member max frequency for 128L is 8MHz only.

Write some easy program like LED on+ wait +LED off+ wait.

Loopback test decribed previously is very usefull.

bathroom or kitchen scales uses various system how to detect weight(capacitive sensor or impulse counter). Load cells obviously not especially in cheap models.

I think check out your power supply and ground system (digital gnd, power gnd,...).
I am not sure cause i have no pdf in this computer but check also pdf of uln2003. COM (protection diodes on the output pins) leave unconnected or connect to +18V not gnd.

a) 1,4,6
and
b) 7 and 8

I think your problem is not 3.3V stabilizator but their dynamic parameter. In other words changing BT module consuption between receiving mode and transmitting mode. Due this companies manufacture special power supllies for transceivers.
