Well actually electron flow constitutes the current flow: now +, _ signs are mentioned as per the convenience so as to be able to solve the electrical circuits and for network analysis, and it is nothing wrong in considering the flow of current to be going from - to + terminal of...

+,- signs are related with only DC supply. Conventional flow of electric current, DC current of course, is from + terminal of power source to - terminal, however the flow of electrons is from - terminal to + terminal.

I think sidewall spaces are intentionally added. They have a specific formulae and floor plans according to which these sidewall spaces are chosen so as to obtain a specific capacitance. You can refer to MOSIS website for more...
