Ideally, it sould not make a difference as long as you keep your MOS well biased (i.e. deep into accumulation). But, still PMOS can be preffered owing to its relatively low process variation which gives you a more defined cap across corners.
As far as dummy metal filling patterns are concerned, connecting them to ground probably increases self capacitance (w.r.t substrate) of the ground level thereby reducing the ground noise.

I believe electronics is the study of electrons only. Though todays definition of electronics is limited to srtudy of circuits with limited " current" capability. Higher current study is more commonly termed as electrical science.
