Coaxial cable is shielded, Cat5 cable is not.
Cat5 cable is twisted pairs that work well with balanced signals. Coaxial cable usually is not used with balanced signals, it uses unbalanced signals.

Do oranges and apples taste the same? Why not, they are both round.

A balun works over a fairly narrow frequency range. You didn't say the frequency.

A balun might need to match impedances. You didn't say the impedances.
