| you could make a snake game .. (like the ones in mobile phones) where the snake senses the edges of LCD and you can make it turn by using a simple button or two

you can make a digital clock or timer. or make the LCD the display of a digital thermo-meter (that sounds good).
or make a calculator (not a must to be scientific), it can be basic calculators...
The ideas are many and many....

you can make temperature control useing lcd and adc
you enter the temp. by kaypad to the lcd ....
you can make clock (timer)
you can make a dice
and so on..............
