Hi surianova,
The parameters on which the sensitivity depends from sensor to sensor.
Like if i am using Platinum RTD the sensitivity depends on the input constant current to the resistance (RTD). Sensitivitycan be increased by increasing input current or resistance.
If we want a general control then varing the gain of the amplifier in series is the best solution. digital control of gain is possible using programmable gain amplifiers from maxim http://www.maxim-ic.com/quick_view2.cfm/qv_pk/3255
when the signal strength is low choose higher gain and lesser gain when signal strength is more which can be controlled digitally.
