A MOS differential pair is a Differential implifier input stage which is made up of 2 MOSFETs which accept the input differential signal.
I suggest you read a book like Design of Analog CMOS Integrated Circuits by Behzad Razavi, or the book Analysis and Design of Analog Integrated Circuits by Gray and Meyer.

A differential pair amplifies the differencial signal and rejects the common mode signal. It's chapter 4 in Razavi's book.

in a mos differential stage the (n type) mosfets are connected with sources tied togather and signal to be amplified is applied between the two gates.you can find better analytical explanation in " design of analog cmos integrated circuits" by behzad razavi

A differential pair is composed of two common source amplifiers (whose bias currents sum up to be a constant). The two amplifiers have the same gain. When an input is applied across the input terminals, and an output is taken differencially from the output nodes of the two amplifiers, the differential output will be the differential input amplified by the gain of the two common-source amplifiers.
