they use it in designing differential amplifiers used in op-amps and such applications

Transistor Pairing is used whenever you need two transistor with the same caracteristics (identical Vbe, gain etc.).

They are used in differential amplifiers and current mirrors.

The best way to obtain a matching pair of transistor is to use transistor obtained on the same Chip like MMDT3906.

Hello

A cheap way to achieve a transistor pairing is to attach the flat faces of the transistor with some kind of good glue, or just use a small rubber to tie them.
